Shawarma
Shawarma or xauarma is a dish originally from the Middle East, composed of thin slices of mutton or chicken, roasted on a vertical skewer and served in Arabic bread with vegetables, hummus, labneh and other side dishes. In Brazil, in the Foz do Iguaçu region, shawarma became popular with the arrival of Lebanese immigrants living on the Triple Border. It soon expanded to the entire western region of Paraná, where it is now popular in several cities. In other cities in Brazil there are two strands: both it is sold on the streets in a similar version of the dish known as “Greek barbecue”, served inside French bread at affordable prices, and restaurants and specialized houses have also been appearing in the last decade in shawarmas, in this case offering Arab spices and more refined cuisine.
