12 – Knuckle / Patinho
The Knuckle has a more rounded shape and is located at the rear of the ox. Cut lean and with little fat, this meat is full of flavor and can be used in breaded steaks and in the preparation of raw ground meat, such as kebab and steak tartar. This cut can also be found in a portioned version, weighing an average of 1 kg to 2 kg.
